This steak knife is designed for slicing and dicing and features a long, sloping cutting edge. The full-height bevel of the Mess Tent has been ground super thin, with the edge coming in at approximately .015" prior to sharpening for optimal slicing power. (.015" = 4 sheets of printer paper!!!)

The Mess Tent features our proprietary heat-treat protocol that we call INFI-XC. This change to our heat-treat protocol increases our average blade hardness by 2 Rockwell points, to 60-62 RC. INFI-XC is not a change in INFI's composition or constituents. It is simply a change in our heat-treat protocol.

This protocol delivers an impressive increase in edge stability and retention while maintaining the ease of resharpening that INFI is known for.
